Is there a way to enter the Due Date/ Expected completion for the risk?

Is the only way to show it here in the Timeline of the Risk Form section?

Sunset is generally considered when the risk ends. However, you still would need to either close the risk if it ends without occurring or becomes an issue which would make it 100% probability.
